I’m trying to create my first template using Auto-template. When I start it, it finds too many fields that shouldn’t apply. Do I need to change the type of brackets?

Thanks for asking! Auto-template will recognize [square brackets], , highlighted text, and text it identifies as being likely to change, such as City, State, Client Name, and so forth.
That said, it does cast a pretty wide net over the document and tends to identify more variables than you might need. You can delete the ones you don’t want by selecting the trashcan icon on the right side of Woodpecker task panel.
Auto-template identifies simple fields such as Single Line text, Date, Rich Text and Number; it currently does not handle more complex fields such as Conditionals and Formulas.
